Thai Green Bean Curry
แกงถั่วเขียว
/kæng t̄hạ̀w k̄heīyw/
Serves 6

Blending sweet potatoes into the broth gives a rich, creamy curry base without a lot of coconut milk.

1 Tbs. (15 ml) olive oil
3 large shallots or onions (about 1/2 cup=120 ml)
1 1/2 Tbs. (22 ml) red curry paste
3 minced cloves of garlic
2 tsp. (10 ml) minced fresh ginger
1 8-0unce (235 ml) pineapple chunks, save the juice
2 medium organic sweet potatoes, peeled and cut into chunks (about 2 1/2 cup= 560 g)
3/4 pounds (340 g) organic green beans, cut the ends off
3/4 cups (180 ml) coconut milk
basil or cilantro leaves for garnish

1. Heat the oil over medium heat.
2. Sauté shallots/onions about 5 minutes.
3. Add curry paste, garlic, and ginger. Sauté about 30 seconds.
4. Add 2 1/2 cups (560 g) water and pineapple juice. Cover and simmer 10 minutes.
5. Add 1 cup (240 g) sweet potato chunks. Cook 10-15 minutes or until they are tender.
6. Blend mixture in a blender or food processor.
7. Return the mixture to the saucepan.
8. Add the rest of the sweet potatoes. Bring to a boil.
9. Cover, reduce the heat, and simmer 5 minutes.
10. Stir in the pineapple chunks, green beans, and coconut milk. Cover and simmer about 8 minutes or until the green beans are tender.
11. Serve in a bowl, garnish with basil or cilantro leaves.

Green Bean Salad with Feta and Walnuts

Serves 6

Nice to have a Greek salad with crips and tender green beans for lunch.

A. Salad Σαλάτα /sáltsa/:
1 pound (450 g) organic green beans, trim the ends
2 cups (480 ml) organic mixed lettuce
1 red onion, cut in half and thinly sliced
1 cup (225 g) crumbled feta cheese (or a dairy-free cheese)
1/2 cup (120 ml) organic cherry tomatoes, cut in half
1/4 cup (110 g) chopped organic walnuts

1. Cook the green beans in boiling water about 4 minutes.
2. Drain, rinse under cold water, and drain again. Then pat dry.

B. Salad Dressing Σάλτσα σαλάτας /sáltsa salátas/:
1 tsp. (5 ml) dried oregano
2 tsp. (10 ml) red wine vinegar
1-2 garlic clove, minced
2 Tbs. (30 ml) olive oil

1. Rub the oregano between fingers to crumble and release aromatic oils.
2. Whisk the oregano, vinegar, and garlic.
3. Whisk in the oil.

C. The Salad! Η σαλάτα! /I saláta/:
1. Toss the green beans, lettuce, and onions together with the dressing.
2. Fold in the feta/dairy-free cheese, tomatoes, and walnuts.

Middle Eastern Sesame Green Beans
الفول والسمسم الأخضر
/alfawl walssamsam al'akhdar/
Serves 6

Tahini* adds a rich, butty flavor with a dairy-free creamy dressing.

1 1/2 pounds (680 g) organic green beans, trimmed
3 Tbs. (45 ml) each: tahini paste and organic lemon juice
1 minced clove of garlic
1 1/2 tsp. (7,5 ml) toasted black or white sesame seeds

1. Cook the beans in a pot of boiling water about 4 minutes or until they are tender.
2. Whisk tahini, lemon juice, and garlic together.

3. Drain the green beans and keep 2 Tbs. (30 ml) of cooked water.
4. Stir the cooking water into the tahini mixture.
5. Toss green beans with tahini mixture.
6. Sprinkle with some toasted sesame seeds.
7. Line green beans on a platter, pour tahini sauce over the center, and sprinkle with the rest of the sesame seeds.

*Tahini‎ is an oily paste made from toasted sesame seeds used in cuisines from: 
  • N. African /tɑːˈhnə/ طحينة  as a side dish with lemon juice, salt and garlic; as hummus: mashed with chickpeas, olive oil, lemon juice, salt and garlic; as sauce on meat and vegetables
  • Armenian տահինի /tahini/ sauce in lahmajoun լահմաջու long, thin piece of dough topped with minced meat, vegetables, and herbs
  • Greek ταχίνι spread on bread or topped with honey or jam
  • Israeli טחינה /t'hina/ served as a dip with flat bread or in pita; a topping of mixed grill meat and shwarma; sauce for meat and fish; in sweet desserts

Szechuan Green Beans

Serves 4

Here is a spicy Chinese dish from the Sichuan province in southwestern China.

white parts of organic green onions, thinly sliced
4 minced gloves of garlic
4 tsp. (60 ml) soy sauce, tamari, or gluten-free liquid amino
4 tsp. (60 ml) minced ginger
2 Tbs. (30 ml) each: toasted sesame oil and mirin (or rice wine)
1-2 tsp. (15-30 ml) chile-garlic sauce
1/4 cup (60 ml) olive oil
1 pound (450 g) organic green beans, trimmed and cut in half
8 ounces (235 ml) shiitake or button mushrooms, thinly sliced (about 3 cups/680 g)
9 dried (quite hot), remove the seeds, chop the chiles OR substitute some dry chile powder to taste

1. Combine green onions, garlic, and ginger in a bowl. Set aside.
2. Combine mirin/rice wine, soy sauce/liquid amino/tamari, sesame oil, while-garlic sauce, and 2 tsp. (30 ml) water in another bowl.
3. Heat the oil in a wok or large skillet over high heat.
4. Add green beans. Cook 5 minutes.
5. Place on a paper-towel on a dish.
6. drain all but 1 Tbs. (15 ml) of oil from the wok/skillet.
7. Stir-fry the green onions about 30 seconds.
8. Add the green beans and optional Thai chiles. Stir-fry 30 seconds.
9. Remove from he heat.
10. Stir in the soy sauce mixture and thicken the sauce.
