On a cold, snowy day, put the ingredients in a slow cooker, sit back and relax or finish a project. Dinner will be done in three hours.
酸甜鸡 (Chinese)

Serves 3

½ cup (100 g) packed light organic brown sugar
⅓ cup (80 ml) organic ketchup
¼ cup (40 ml) each: apple cider vinegar and organic soy sauce or liquid aminos (gluten-free)
2 Tbs. (30 ml) cornstarch (also called: cornflour, maize starch, or maize)
1 minced garlic clove
1 tsp. (5 ml) ground ginger
1 ½ pounds (780 g) organic or free range boneless, skinless chicken breasts, cut into bite size pieces
1 onion, quartered
2 organic bell peppers, cut into bite size pieces
1 can (20 ounces) (465 g) organic pineapple chunks in juice
sesame seeds and sliced organic green onions stems for garnish
side dishes: cooked rice

 In slow cooker, combine brown sugar, ketchup, vinegar, soy sauce/liquid aminos, cornstarch, garlic and ginger.
 Add chicken, onions, peppers, pineapple and juice.
 Stir to coat the chicken with the sauce.
 Cover, cook on Low for 3 hours or on High for 90 minutes. Check to see the chicken is cooked and not pink in the middle.
 Serve over cooked rice.
 Garnish with sesame seeds and green onion stems.
