The "cake" goes perfect for breakfast guests, special family breakfast, nice midday snack, or an after dinner healthy dessert.
Serves 6
Preheat the oven to 375F (190C)
3 organic bananas
⅓ cup (80 ml) organic maple syrup Grade B
2 cups (400 g) orangic rolled oats
½ cup (100 g) orangic raisins
¼ cup (150 g) toasted or raw organic wheat germ
½ cup (100 g) organic berry jam (blueberry, apricot, raspberry, strawberry or your favorite)
⅓ cup (65 g) chopped organic walnuts
1. Line the bottom of a round cake pan with parchment paper.
2. In a large bowl, add the bananas and maple syrup. Mash into a chunky purée.
3. Stir in the oats, raisins, and wheat germ.
4. Spread half of the mixture in the pan.
5. Spread the jam over the mixture.
6. Spread the walnuts over the top.
6. Spread the remaining oat mixture.
7. Bake for about 30 minutes, until slightly golden.
8. Place on a wire rack and losses the sides with a knife.
9. Let it cool 15-20 minutes.
10. Invert it onto a wire rack and peel off the parchment paper. Then flip it over and place on a plate.
11. It can be stored in an airtight container in the refrigerator for 3 days.
