First off, most of the nutrients are between the peel and the potato, and the potato should not be peeled. But let's make some chips!

1. Preheat the oven to 400F (200C)
2. Wash the organic potato.
3. Toss the potato peels with a drizzle of olive oil.
4. Bake on a rimmed baking sheet for 10 minutes.
5. Optional sprinkle some herbs and spices that go well with potatoes:
garlic * paprika * rosemary * sea salt * oregano * thyme
