Leeks and raisins combine make a wonderful, tasty side dish.
Makes 2 servings

4 medium organic leeks, white and light green parts, rinsed and thinly sliced
1/2 cup (100 g) organic raisins
1/4 cup (60 ml) organic vegetable broth
1 tsp. (5 ml) olive oil
ground pepper to taste

1. Put all the ingredients in a skillet.
2. Cover and cook over medium heat for about 10 minutes, stir a few times.
 (a) Add more broth as needed if the leeks become dry.
3. Cook until the leeks are soft and the liquid is mostly absorbed.
4. Season with pepper to taste.
5. Serve immediately.
