Frittata con Patatas y Feta
Serves 4-6

1/4 cup (60 ml) olive oil
1 cup (200 g) chopped onions
8 organic eggs
3 Tbs. (45 ml) organic milk or diary-free almond milk
1 pound (455 g) organic red potatoes, diced, cooked in salted boiling water for 5 minutes and drained
pinch of black pepper to taste
1/2 tsp. (2,25 g) allspice
3/4 cup (150 g) feta cheese (or a dairy-free cheese)
optional: 2 poblano chiles (a mild chili pepper), charred, peeled, stemmed, seeded and cut into thin strips
1. In a broiler proof skillet over medium heat, sauté the onion in the oil until brown about 7 minutes.
2. Add the optionals chiles and cook until they turn a light brown, about 3 minutes.
2. Whisk or use a fork, beat the eggs with the milk until they foam.
3. Toss the potatoes into the onion mixture, stir in the black pepper and allspice, cook until the potatoes are soft, about 6-8 minutes.
4. Pour the egg mixture on top of the potatoes, stir gently as the eggs begin to cook along the edges and bottom of the pan, 2-3 minutes.
5. sprinkle the cheese on top.
6. Place the skillet under the broiler and broil until the frittata is puffed and lightly browned on top, about 3-4 minutes.
7. Remove from the oven, cut into wedges, and serve.
7. Or let it cool and serve at room temperature.
