I have made fried rice...part that says to have cold, cooked rice, I put the hot rice in the freezer, because I did not read the directions beforehand. So, here is a casserole baked in the oven.-Mike
揚げ米キャセロール (Japanese)

Serves 3-4
Preheat the oven to 400F (200C)

Add additional or substitute the Asian vegetables.

2 1/2 cups (500 g) bite-sized organic broccoli florets
2 cups (400 g) cooked-note "cooked" brown basmati rice
1 1/2 cups (300 g) diced organic baby bok choy
1 1/4 cups (250 g) shredded organic carrots
1 1/4 cups (300 ml) organic vegetable broth
3/4 cups (150 g) roasted organic cashews
3 minced cloves of garlic
1 Tbs. (15 g) minced ginger
1 tsp. (5 ml) liquid amion (gluten-free)

1. Put all of the ingredients in a large bowl and stir.
2. Transfer to a casserole bowl.
3. Cover and bake for 45-55 minutes, or until the vegetables are soft.
4. Serve hot.



Bok choy can be steamed, boiled, stir fried, sautéed, or shredded for a coleslaw. It contains vitamins C (for antioxidant), A (for immense system), and K (to control binding of calcium in bones and tissues) along with calcium, magnesium, potassium, and iron.
