After a trip to the local market, we made this salad for lunch.
Makes 2-4 servings
A. Dressing:
2 Tbs. (30 ml) organic lemon juice
1 Tbs. (15 ml) extra-virgin olive oil
1 minced garlic clove
little black pepper to taste
1. Whisk the ingredients.
B. Salad:
1 cup (200 g) organic black beans
8 ounces (225 g) organic grape tomatoes cut in half
2 organic avocados, pitted, peeled, cut into cubes
some chopped basil and parsley
optional herbs that go with beans: rosemary, sage, savory, and/or thyme
optional seeds: pumpkin, sunflower, or chia seeds
optional seeds: pumpkin, sunflower, or chia seeds
1. Put all the ingredient sin a bowl.
2. Pour the dressing and toss.
3. Let stand for 15 minutes.
4. Season with any optionals herbs and/or seeds.
