The sauce is often served over roast pork, but any meat, chicken, shrimp, or salmon will taste "Cuban". Then, too, the sauce is used to marinade foods. Try with boiled organic potatoes!
Mojo Cubano
Makes about a cup (240 ml)

2 Tbs. (30 ml) organic each: lime juice and orange juice (substitute sour oranges, but heard to fine outside of the Caribbean or south Florida)
1/2 cup (120 ml) olive oil
1 tsp. (4,5 g) each: chopped oregano and sea salt
1/4 tsp. (1,25 g) ground cumin
6 minced organic cloves of garlic

1. Combine all the ingredients in a small bowl.
2. Let it sit for 30 minutes.
3. Come to room temperature before serving.
4. Store in an airtight container for up to 3 days in the refrigerator.
