We replace sour cream with plain organic yogurt. Here is a way to make sour "cream".
Makes 6 servings
14-16 ounces (400-455 g) organic tofu, drained
(soft tofu = looser consistency
firm tofu = firmer consistency)
1 1/2 to 2 Tbs. (20-30 ml) organic lemon
1. Put the ingredients in a blender and process until smooth.
2. Taste and add more lemon juice if needed.
3. Refrigerate 1 hour before serving.
4. Usage:
- for a creamy dressing mixture
- appetizer dips
- over potatoes, chili, vegetables
- add to a sauce
- devil eggs
- in soups
- in pasta
- etc.
