Our neighbor does not like beets, so she gave use three huge bags of beets! We still do not know where she got them.


Буряковий салат
/buryakovyy salat/
Serves 8

3-4 organic potatoes, cut into cubes
5 organic carrots, cubed
1/2 pound (200 g) organic beets, cubed OR 2 cans sliced organic beets, drained and cubed
1 large dill pickle, diced
1 organic onion, minced
1 cup (200 g) organic peas
1 Tbs. (15 ml) each: chopped parsley and olive oil
black pepper to taste
optional: 15-ounce (430 g) organic sauerkraut, rinsed and drained

1. Steam the potatoes and carrots until tender.

2. Turn off the heat and add the peas, covered for 10-15 minutes
3. Place the uncooked beets into a large pot and cover with water.
 (a) Bring to a boil over high heat, then reduce to medium-low, cover, and simmer for about 20 minutes until tender when poked with a folk.
3. Add the canned beets to the steamed vegetables.
4. Stir in the pickles, onions, peas, olive oil, and black pepper.
 (a) Add optionals sauerkraut.
5. Garnish with parsley before serving.
