Zanahorias con Limón y Chocolate (Spanish)
Serve 4
2 cups (450 g) organic baby carrots
1-2 minced or pressed garlic cloves
1/4 cup (60 g) diced onion
pinch or two of black pepper
6 organic slices of lemons
2 tsp. (10 ml) fresh or dried oregano
1/4 cup (60 ml) organic vegetable broth
2 ounces/4 Tbs. (55 g) chopped bittersweet chocolate* (or dairy-free chocolate)
1 Tbs. (15 ml) organic tomato paste
1 Tbs. (15 ml) olive oil
optional other herbs go well with carrots:
anise, basil, chervil, chives, cinnamon, cloves, cumin, dill, ginger, marjoram, mint, parsley, sage, savory, tarragon, and/or thyme
1. Sauté the carrots, garlic, black pepper, and onion in the oil over medium heat for about 3 minutes.
2. Add the lemon, oregano, and broth. Cook 5 more minutes.
3. Stir in the chocolate and tomato paste. Cook 2-3 minutes.
4. Serve warm
*Best chocolate has 75% or more cocoa as the first ingredient.
