There is always leftover stale bread in the refrigerator. People on the Greek island of Lefkáda (Greek :Λευκάδα, also known as Lefkas or Leukas) in the Ionian Sea, add a little of this and a little of that, and a side dish or an appetizer is made.
Makes 2-4 servings

6 Tbs. (90 ml) olive oil
2 cups (400 g) (gluten-free) bread cubes without crusts
1 red organic onion, chopped
3 Tbs. (45 g) organic tomato paste
black pepper to taste
optional: chopped garlic

1. Heat 2 Tbs. (30 ml) olive oil in a skillet over medium-low heat.
2. Sauté the bread until golden brown and crisp. Remove and set aside.
3. Add 2 more Tbs. (30 ml) oil and cook the onions (optional garlic), stir about 10 minutes.
4. Add the tomato paste and mix with the onions.
5. Add the bread and toss together until the bread is warm,.
6. Remove and drizzle with the remaining oil and pepper.
