Made ahead of time, add some bread, glass of wine, bowl of olives, and you are ready for a Greek mezedes μεζέδες (small bites) with friends.


Makes about 3 cups (600 g)

3 cups (600 g) crumbled feta or kalathaki limnou / Καλαθάκι Λήμνου*
1 Tbs. (15 g) dried savory or 2 tsp. (9 g) dried oregano
2/3 cups (160 ml) olive oil

1. In a food processor, combine the cheese and savory/oregano and pulse on and off. 
2. Drizzle in the olive oil until the mixture is creamy.
3. Transfer to a glass jar. 
3.  Cover the surface of the cheese about 1/4 inch (1 cm) olive oil.
4. Seal the jar and store in the refrigerator for 3-5 days before serving. 

* Kalathaki limnou is a brine cheese made with 100% goat's milk.
