The rilled pita adds an smoky taste to a "basic" tomato dish.
Makes 4-6 servings

2 pita, grilled or toasted
3 organic tomatoes, cut into chunks
2 organic red onions, cut in half and thinly sliced
1 1/2 cups (300 g) chopped parsley
2 tsp. (10 g) dried oregano
6 Tbs. (90 g) olive oil
black pepper to taste

1. Cut the toasted peas into strips, about 1/8-inch (3 mm) wide and 2-inch (5 cm) long.
2. Toss in a bowl, the pita strips, tomatoes, onions, herbs, oil, and pepper.
3. Serve immediately

NOTE:
Tomatoes are loaded with vitamin C and a main sources of beta-carotene lycopene (helps immune system) but most be consumed with fat, example olive oil, to be absorbed.

.as an appetizer,

stuffed, a small pizza.
