The spice mixture is used in Middle Eastern and Greek cuisines to season lamb, fish, chicken, beef, and soups.
(Arabic) بَهَارَات
"spices"
Makes 2 cups (400 g)

4 Tbs. (60 g) each: paprika and black pepper
2 Tbs. (30 g) each: coriander, cinnamon, and cloves
3 Tbs. (45 g) cumin
1 tsp. (4 g) cardamon
4 tsp. (18 g) nutmeg
optional to taste: allspice, black peppercorns, dried red chili peppers, saffron; mint (a Turkish ingredient)

1. Combine all ingredients, mix well
2. Store in an airtight jar and keep away from direct sunlight.
