I always have left over pineapple. So combine it with those avocados I do not seem to use and make a salsa for fish, tacos, side dish, etc.
1 cup (200 g) diced rip organic pineapple
1/2 organic red onion, diced
2 Tbs. (30 g) chopped cilantro or parsley
1/2 jalapeño, diced
zest of 1 organic lemon
1 Tbs. (15 ml) organic lemon juice
2 organic avocados, diced
1. In a small bowl, combine all the ingredients.
