It might be a strange combination but very tasty!
Serves 6

2 bunches of organic Swiss chard
1 organic red onion, cut in half and sliced
2 minced organic garlic cloves
1/4 organic bell pepper
1 cup (200 g) organic beets, julienne cut
3 Tbs. (45 ml) organic lemon juice
1 cup (200 g) feta cheese (or a dairy-free cheese)
1/4 cup (50 g) toasted organic chopped walnuts

1. Cut the stems of the Swiss chard, chop. Save the rest of the chard.
2. In a Dutch oven or large kettle with boiling water, add the chard leaves, return to boil, cook about 1-2 minutes.
3. Drain, rinse in cold water, and set aside.
4. Sauté onion, garlic, bell pepper, and chard stems in oil, about 10-15 minutes
5. Squeeze the moisture from the leaves.
6. Add leaves and beets to the skillet; sauté 1 minute.
7. Add lemon juice.
8. Before serving, add cheese and walnuts.
