It is delicious for a lunch, a light snack, or a side-dish for dinner. Do not forget a warm, crusty bread to soak up all the lemon-oil and feta!
Ψημένα Σπαράγγια και Φέτα Σαλάτα (Greek)
/psitá sparángia kai féta baláta/
Serves 4
Heat the grill to high.
about 24 spears of organic asparagus, ends trimmed
3 Tbs. (45 ml) olive oil
some black pepper
1 tsp. (5 ml) organic lemon zest
1 Tbs. (15 ml) organic lemon juice
1/3 cup (65 g) crumbled feta cheese
ένας /énas/ Αʹ. 1. Place the asparagus spread in a baking dish and toss with 2 Tbs. (30 ml) oil and black pepper.
δύο /dýo/ Βʹ. 2. Remove and grill for about 3-4 minutes, until nicely browned and tender.
τρία /tría/ Γʹ. 3. Remove and place back in the baking dish.
τέσσερα /téssera/ Δʹ. 4. Let it cool.
πέντε /pénte/ Εʹ. 5. Cut into bite-size pieces.
έξι /éxi/ Ϛʹ. 6. Place in a bowl and add remaining oil, feta, lemon zest and juice. Toss.
επτά /eptá/ Ζʹ.7. Serve at room temperature.
