It is an exotic twist on the classic carrot-raisin salad, with spices, color, sweet and savory flavors.
Salade marocaine aux carottes et pois chiches (French)
(Arabic) سلطة الجزر والحمص المغربي
/sultat aljuzur walhims almaghribii/
Serves 6
A. Salad dressing:
1/4 cup (60 ml) each: olive oil & organic orange juice
1 tsp. organic lemon zest + 3 Tbs. organic lemon juice (35 ml)
1 1/2 Tbs. (35 ml) organic honey
1 tsp. (5 g) cumin
1/2 tsp. (2,5 g) each: cinnamon and ginger
1/4 tsp. (1,25 g) each: coriander, allspice, and cayenne pepper

1. Whisk together all the ingredients.


B. Salad:
organic carrots, peeled and coarsely grated
1/2 cup (100 g) each: chopped mint, cilantro, or parsley &  slivered almonds (optional: toasted: 350F/175C for about 5 minutes)
15-ounces (1 can) (430 g) organic chickpeas (garbanzos), rinsed and drained
2 Tbs. minced organic shallots
1 minced organic garlic clove

1. To the dressing, add all of the ingredients and toss well.
2. Cover with plastic wrap and refrigerate for 30 minutes to a few hours.
3. Taste and adjust seasoning if necessary.
4. Transfer to a serving dish and garnish with more mint, cilantro or parsley.
