A simple dressing over boiled potatoes or boiled eggs, steamed or boiled vegetables.
Salsa Fresca (Italian)
Makes enough for 6 hard-boiled eggs cut in half
or
1 pound (455 g) boiled potatoes
Serving 6 

1 cup (130 g) packed cup of fresh parsley leaves
1/2 packed cup (65 g) fresh mint leaves
2 Tbs. (30 ml) white-wine vinegar
1/4 cup (60 ml) olive oil

1. In a food processor, combine the parsley, mint, and vinegar.
2. Pulse once or twice.
3. While the machine is running, drizzle the olive oil in slowly.
4. Serve over halved hard-boiled eggs, toss with boiled warm potatoes or steamed vegetables. (example: zucchini, broccoli, or cauliflower)

Mint plants are annuals.
