The salad is delicious by itself or with meats or fish, or an appetizer, even as a sandwich stuffer with turkey, chicken or ham if you like.

Insalata di Mele e Carote (Italian)
Serves 6

2 organic apples, skin on, julienned (about 3 cups/600 g)
3 large organic carrots, peeled and julienned (about 2 cups/400 g)
juice of 1 organic orange
3 Tbs. (45 ml) olive oil
2 Tbs. (30 g) chopped parsley or 2 tsp. (10 g) dried parsley
ground black pepper to taste
optional: chopped organic walnuts
optional herbs that go well with carrots and apples:
  • cardamom
  • cinnamon
  • ginger
  • cumin

1. Toss the apples and carrots in a salad bowl with the orange juice and olive oil.
2. Sprinkle with the parsley and season with the pepper.
3. Serve cold.
