Makes 6-8 cups
1 can (15 ounces/425 g) organic black beans, rinsed and drained
1 package (8 ounces/225 g) guacamole or 1 cup (225 g) guacamole (Look at the many of our recipes.)
1 cup (230 g) organic (diary-free) yogurt
1 cup (260 g) salsa or some of our recipes for homemade salsa
1 cup (115 g) shredded (dairy-free) cheese
2 organic diced tomatoes
8 ounces (170 g) sliced black olives
minced organic scallions for topping
1. Layer each cup with about 2 Tbs. (30 g) of each ingredient: black beans, guacamole, yogurt, salsa. cheese, tomatoes, olives.
2. Top with scallions and refrigerate.
