Salad for lunch, for yourself or for school lunch, try this. Have a few on hand for snakes as well.

Makes 4 individual cups
1 container (10 ounce/ 285 g) organic hummus
1/4 cup (40 g) (dairy-free) feta cheese
1/2 cup (50 g) pitted kalamata olives, drained and chopped
2 Tbs. (12 g) chopped roasted or fresh organic red bell peppers
1 small each organic: cucumber and diced tomato
oregano
organic chips
1. Spread about 2 Tbs. (235 g) of hummus alone the bottom of each container.
2. Sprinkle the hummus with equal amounts of feta, olives, red bell peppers, tomatoes, and cucumber.
3. Garnish with oregano and serve with chips.
4. Refrigerate for up to 3 days.
