Okra is a favorite Indian vegetable, known as bhindee and lady's fingers.
करी हुई भिंडी (Hindi)
/karee huee bhindee/
Serves 4

1 pound (455 g) organic okra
4 Tbs. (60 ml) olive oil
1 bunch scallions, trimmed and sliced
2 garlic cloves, peeled and crushed
2 inch (5 cm) ginger root, peeled and chopped
1 tsp. (5 g) each: ground cilantro and turmeric, minced chili or chili powder, and garam masala*
1 1/2 tsp. (7, 5 g) ground cumin
1 cup (130 g) organic chopped tomatoes
2/3 cup (160 ml) organic vegetable stock
chopped cilantro or parsley for garnish

एक /ek/ 1. Wash the okra, trim off the stems and pat dry.
दो /do/ 2. Heat the oil in a saucepan.
तीन /teen/ 3. Add the scallions, garlic, ginger, and chili. Fry gently for 1 minute.
चार /chaar/ 4. Add the spices a simmer for 15 minutes, stirring and turning the mixture.
पांच /paanch/ 5. The okra is cooked but a little crisp.
छह /chhah/ 6. Sprinkle with garam masala, adjust the seasoning if necessary.
सात /saat/ 7. Garnish with chopped cilantro or parsley.
आठ /aath/ 8. Serve hot.
