Cacciatore means "hunter" in Italian. The vegetable are suggestions. Use almost any vegetable you have on hand.
1. Cut into serving bites, organic:
- mushrooms
- onions,
- bell peppers
- potatoes
- fava beans
- minced cloves of garlic
- carrots
- zucchini
- capers
- celery
- etc.
2. In a deep skillet over medium heat, coat the pan with olive oil.
3. Add mushrooms and cook for 10 minutes.
4. Add the other vegetables and cook about 7 minutes.
5. Pour in diced organic tomatoes, some white wine, and 1 cup (240 ml) organic vegetable broth.
6. Cover and bring to a boil and simmer for 30 minutes.
7. Top with basil, oregano, thyme, and chili flakes (optional).
8. Mix with your favorite pasta and enjoy.
9. Serve from the skillet at the table.
Optional:
1. Heat cubed tofu for 5-8 minutes in the skillet until all sides are lightly browned.
