Serves 8

3 pounds (1,35 kg) = 4-6 organic zucchini, trimmed and sliced into 1/2-inch (12 mm) thick rounds
1/4 cup (60 ml) olive oil
2 Tbs. (30 ml) red wine vinegar
1/2 cup (65 g) each chopped: roasted organic pistachios and fresh mint

1. Sautée the zucchini with half of the oil over medium-high.
2. Add half the zucchini. Cook 5 minutes.
3. Transfer to a serving bowl.
4. Repeat with the remaining oil and zucchini.
5. Add to the bowl and drizzle with red wine vinegar.
6. Sprinkle with half the pistachios and mint. Toss.
7. Top with remains chopped pistachios and mint.
8. Serve at room temperature.
