I enjoy mushrooms (also called "toadstools") and try to find different ways to serve them. Mushrooms contain lots of vitamins and minerals as well as used in folk medicines.
Serve 4
2-3 Tbs. (30-45 ml) balsamic vinegar
2 minced organic garlic
1/4 cup (60 ml) olive oil
5 mushrooms, quartered
6 Tbs. (90 g) pieces of nut (your choice)
optional: organic lettuce
1. Whisk together vinegar, garlic, and olive.
2. Add mushrooms and stir.
3. Marinate an hour.
4. Lightly toast the nuts over medium heat about 3 minutes.
5. Mince the nuts and set aside to cool.
6. Toss the nuts and mushrooms.
7. Serve at once.
8. Optional, mix into a salad.
* Toadstool is shown on greeting cards and in fairy stories, goes back to the 15th and 16th centuries.
Mushrooms can be edible, poisonous, unpalatable, or psychoactive.
