This recipe was not made for slow cooker, but I just put everything in the slow cooker and turned it on. It came out very good, even leftovers the following night.
Serves 2-4
1 cup (240 ml) organic orange juice
1/4 (60 ml) balsamic vinegar
1 Tbs. (15 ml) organic maple syrup
4 organic chicken thighs
1 tsp. (5 g) black or lemon pepper
handful of organic spinach
3 organic mandarin oranges or 2 navel oranges, peeled
1/4 cup (30 g) (dairy-free) hard cheese
3 Tbs. (45 g) chopped organic walnuts
1 Tbs. (15 ml) (dairy-fee) butter
1 large organic carrot, sliced in rings
organic baby potatoes
1. Brown the chicken.
2. Add the ingredients in a slow cooker.
3. Stir in the chicken.
4. Cook slow for 6-7 hours.
5. Serve with rice and a salad
