ヤサイイタメ
/yasai itame/
Serves 4
1/2 organic green bell pepper, cut in half and seeded
ground black pepper
1 organic carrot, peeled, cut crosswise into thirds, and thinly sliced lengthwise
6 slices of turkey bacon, cut into 1-inch (2,5 cm) pieces OR minced organic pork cut into slices
1 organic small yellow onion, cut into very thin slices
1 Tbs. (15 ml) olive oil
4 (shiitake) mushrooms, stems removed and caps sliced
1/2 head organic green cabbage, chopped into 2-inch (5 cm) pieces
4 organic green onions, including the green tops, cut into 2-inch (5 cm) pieces
1/2 cup (65 g) organic bean sprouts
minced ginger to taste
1/2 tsp. (2,5 ml) soy sauce or gluten-free liquid aminos
一 Fill a small saucepan with water and bring to a boil. Salt the water lightly.
二 Add the carrot and blanch for 1 minutes. Drain and rinse under running cold water. Set aside
三 In a wok or large frying pan over high heat, cook the bacon or pork throughly. Transfer to a bowl.
四 Pour out any fat from the pan. Wipe clean and return to the heat. Add the oil, swirl to coast the bottom and sides. Heat until the oil is almost smoking.
五 Add the bell pepper, yellow onion, mushrooms, carrots, and ginger. Stir for 2-3 minutes.
六 Add the cabbage, green onions, and bean sprouts, stir for 2 minutes.
七 Return the bacon to the pan and stir for a minute.
八 Check to see that the vegetables are barely tender.
九 Season to taste with black pepper, drizzle with soy sauce/liquid anions, and remove from the heat.
十 Transfer to a platter.
