This is easily, quick, and great spicy Thai condiment.

Makes 1 quart (380 ml)

A. Whisk:
1 1/2 cups (360 ml) rice vinegar
2-3 Tbs. (30-45 ml) honey 

B. Add (suggestions): sliced
4-5 organic cucumbers 
2 scallions
1 each organic: turnip, onion, carrot, and bell peppers
1-2 garlic cloves
some: cilantro, turmeric, dill, and lemongrass

C. Add the rice vinegar and honey.
Seal jar and marinate a few days before serving.
