Goat cheese is dairy-free. Add the dressing to salads, over vegetables, on meats, or as an appetizer dip.

3 ounces (90 g) goat cheese, room temperature
3 Tbs. (45 ml) organic apple cider vinegar or white wine vinegar
3 Tbs. (45 ml) olive oil
2 tsp. (10 ml) organic lemon zest
2 Tbs. (30 g) chopped chives
1 organic clove of garlic, minced
pinch or two of black pepper

1. Whisk together all the ingredients.
2. Slowly stir in the 1 Tbs. (15 ml) water or more as needed.
