Sopa de ajo
Serves 4
Preheat the oven to 450F (230C)
2 Tbs. (30 ml) olive oil
+4 cloves of organic garlic
4 slices of (gluten-free) French bread, cut into 1/4 inch (5 mm) slices
1 Tbs. or more (+6 g) paprika
4 cups (1 L) of organic beef stock
1 tsp. (2 g) ground cumin
pinch of saffron and cayenne pepper
4 organic eggs
2 slices of diced ham
fresh parsley or rosemary for garnish
uno 1. Add garlic and oil to a pan and cook until golden color. Set aside.
dos 2. Add the bread in the oil and cook until golden. Set aside.
tres 3. Add the paprika to the oil pan for a few seconds.
cuatro 4. Stir in the ham, beef stock, cumin, saffron, and cayenne pepper.
cinco 5. Crushed the garlic cloves and add to the pan. Cook about 5 minutes.
seis 6. Fill four ovenproof soup bowls with the stock.
siete 7. Place a slice of bread on top.
ocho 8. Top with crack egg.
nueve 9. Bake for 4-5 minutes, poaching the egg.
diez 10. Remove and sprinkle with parsley or sprig of rosemary.
