I really liked meat loaf but not the hamburg. So I use lentils instead!
Serves 6-8
Preheat the oven to 350F (175C)
1 cup (130 g) brown or green lentils
3 cups (7,5 dl) water
1 bay leaf
1 diced organic red onion
3 minced organic garlic cloves
1 since organic carrot
optional: other vegetables
1 cup (130 g) oats
1 cup (130 g) (dairy-free) cheese
1/2 cup chopped organic walnuts
2 Tbs. ground flaxseed
2/3 cup (85 g) tomato sauce
1 Tbs. (15 g) organic honey
2 tsp. (4 g) dried basil
1 tsp. (2 g) oregano
1. Bring the water to a boil over medium heat with the bay leaf, onion, and garlic.
2. Cover and reduce heat to low.
3. Cook about 35 minutes.
4. Remove from the heat. Take out the bay leaf and rain.
5. Stir in the carrots (optional vegetables), oats, cheese, walnuts and flaxeed into the lentil mixture.
6. Whisk: tomatoes sauce, honey, oregano, and basil.
7. Add to the lentils.
8. Add to a loaf pan and bake 35-45 minutes.
9. Remove and cool about 10 minutes.
