Gabañzo bean is also called: chick pea (chickpea), Bengal gram, Egyptian pea, French pots chichi, old Spanish arvaço. The legumes were found nearly 8500-7500 BCE in present-day Turkey. It is used in many dishes.
Nohut, Domates Sosu, Ispanak, Yumurtalı (Turkish)
(chickpeas, tomato sauce, spinach, egg)
Serves 4
olive oil
chopped organic spinach
sliced organic garlic cloves
2 cups (260 g) crushed organic tomatoes
1/4 cup (60 ml) (dairy-free) organic yogurt
4 organic eggs
1 can organic chickpeas, rinsed
chopped or dried thyme or parsley
optional: slices of (dairy-free) goat cheese
1. Heat oil in a skillet over medium heat.
2. Add spinach and garlic, cook about 2 minutes.
3. Reduce heat to low and add the tomatoes, chickpeas, and yogurt, simmer.
4. Make 4 wells in the sauce and crack an egg in each one.
5. Cover and cook until the eggs are done.
(a) Halfway cooked, add optional goat cheese
6. Sprinkle thyme or parsley.
7. Serve from the skillet.
