Σπανάκι, limone, champiñón sandwich pita

Serves 4
4 cups (1200 g) organic spinach leaves
2 organic red onions, thinly sliced
1 cup (130 g) organic mushrooms, sliced
2 chopped organic tomatoes
1 organic cucumber
juice of 1 organic lemon and zest
4 Tbs. (60 ml) olive oil
4 (gluten-free) pita bread
1. Combine all the vegetables, oil, and lemon juice and zest in a bowl.
2. Toss the salad.
3. Stuff the mixture into the pita brad and serve.
