It is a blend of ground spices originated from India, but also common in Pakistani, Nepalese, Bangladesh, Sri Lankan, and Caribbean cuisines. It can be used alone or with other seasonings. 


Makes a cup (92 g)

3 Tbs. (27 g) black pepper
4 tsp. (8 g) cardamon pods
3 tsp. (6 g) coriander seeds
1 1/2 tsp. (3 g) cumin seeds
1-inch (2,5 mm) or more cinnamon stick

1. Process all ingredients in a spice grinder until finely ground, about 30 seconds.

2. Store at room temperature in airtight container up to a year.
