Goat cheese is dairy-free.  That is why I am using it. - Mike

1 organic lemon, remove 1 tsp. (5 g) of zest
1-2 organic garlic cloves
1 1/2 cups (180 g) goat cheese at room temperature
4 Tbs. (55 g) dairy-free cream cheese
2 Tbs. (30 ml) olive oil
organic dried tomatoes
choice of herbs:
  • dill
  • paprika
  • mint
  • basil
  • red pepper flakes
  • rosemary
  • thyme
  • parsley
  • black pepper

1. Use a blender to mince the garlic.
2. Add the zest, 1 Tbs. (15 ml) of lemon juice, and the cheeses, for about 20-30 seconds.
3. Add any herbs, dried tomatoes, and oil. Blend until smooth.
 (a) Add more oil if needed.
4. Serve with a dash of an herb on top.
5. It can be refrigerated for a week in a airtight container.
 (a) Refresh with a little olive oil mixed in.
6. Use the rest for:
  • a sandwich spread
  • over cooked meat 
  • on vegetables
  • on homemade pizza
  • brush on a bruschetta with slices of tomatoes
  • etc.
