We are always trying to add more fruit to a meal. Yes, a tomato is a fruit. It is also good to add more fish to a diet.
Serves 4
Preheat the oven to 375F (190C)

1 large sliced organic tomato
4 fish filets of your choice
2 Tbs. (30 ml) (dairy-free) organic mayonnaise
your choice of seafood seasonings: dill, lemongrass, rosemary, thyme, sage, and/or smoked paprika
very little lemon pepper
organic lemon cut into wedges
olive oil

1. Place the tomatoes on a parchment paper baking pan.
2. Drizzle with some oil.
3. Blot the fish dry and place on the pan.
4. Mix the mayonnaise and spices.
5. Spoon the mixture over the filets.
6. Switch the oven to boil and broil until the tomatoes are bubbling and the fish has a temperature of 145F (71C), about 5-8 minutes.
7. Top the filets with the tomatoes slices and lemon wedges.
