Tetrazzini is an Italian-American dish. It is made with (leftover) poultry or seafood. Various types of dairy sauces, pastas, and vegetables are used. So, be creative and choice the meat, sauce, and pasta you want tonight. Then, change the ingredients next time you want tetrazzini.

Serves 8
Preheat the oven to 350ºF/175ºC
  • 1 pound (455 g) a package of: linguine, spaghetti, egg noodles or other types of pasta
  • 2 cups (260 g) singly or a mixture of sliced: spinach, carrots, broccoli, bell peppers, zucchini, leeks, asparagus, celery, peas, etc.
  • 1 pound (455 g) shredded cooked organic: turkey, chicken, ham, seafood (of choice)
  • 1 cup (130 g) sliced mushrooms
  • 2 cups (480 ml) (dairy-free) butter, cream, milk and cheese, béchamel, mornay, or yogurt
  • olive oil
  • 1 cup (130 g) organic onion, chopped
  • minced organic garlic
  • (gluten-free) flour
  • 2 cups (480 ml) organic chicken broth; seafood use chicken, clam juice, seafood stock, or for a kick, Cajun-style broth (Cajun seasonings and andouille sausage)
  • 1 Tbs. (15 ml) organic lemon juice
  • 3/4 cup (180 ml) white wine
  • 2 cup (480 g) (dairy-free) different types of cheeses
  • garnishes chopped: parsley, chives, cilantro, mint, etc.
1. Cook the pasta as directed.
2. Sautéed in wine: onions, mushrooms, and garlic. 
3. Whisk in the broth and lemon juice.
4. Stir in the choice of dairy. 
5. Simmer until it thickens. Add little flour if needed.
6. Toss in the cooked pasta and vegetables.
7. Add everything to a casserole pan. Sprinkle with cheese.
8. Cover with aluminum foil and bake for about 25 minutes.
9. Remove foil and bake another 15 minutes.
10. Let it rest for 5-10 minutes. 





When I am in France, I usually order a quiche for lunch. (Manly, because I do not know what else to order.) Now, see if I can recreate those fond memories.-Mike


Quiche Lorraine (French)
Serves 4
Preheat the oven to 400ºF/200ºC

~It can be premade the day before and reheated, covered with foil, at 300ºF/150C for 35-45 minutes.~

1 slightly thawed (gluten-free) pie crust, 9 inch/23 cm
6 slices of nitrate-free thick bacon, diced
2-3 chopped organic shallot
4 organic eggs
1 1/4 cups (300 ml) (dairy-free) cream
1 1/4 cups (160 g) shredded cheese: Gruyère, Emmental, or Jarlsberg / dairy-free cheeses: vegan Swiss-style cheese or plant-based cheese
little to taste: chives, thyme, parsley, rosemary, nutmeg, Herbs de Provence, and/or Himalayan salt (Start with one or two types and keep the blend simple.)

optional: 
  • slices of organic tomatoes or mushrooms on top before baking or chopped and added to the mixture
  • top off with a a sprig of rosemary

un 1. Bake the crust on a baking sheet about 10-15 minutes.


deux 2. Sauté the bacon on medium heat, about 10 minutes.


trois 3. Retain 1 Tbs. of fat and add the shallots on medium-low for about 4 minutes.


quatre 4. Remove the pan and side aside.


cinq 5. Whisk the eggs while adding the cream and spices.


six 6. Spread the shallots on the bottom of the pie crust.


sept 7. Add half of the bacon, topped with the cheese, then the rest of the bacon.


huit 8. Pour in the egg mixture.


neuf 9. Bake 45-50 minutes.


~It can be frozen for 3 months. Thaw for 24 hours before reheating, covered with foil and bake at 300ºF/150ºC for about 40 minutes.~

Oats can be eaten uncooked as in muesli, cooked with water, milk, or orange juice as in porridge, cookies, and oatmeal desserts. Or here, it is used in pan cakes/waffles. 

Bite of history: oatmeal began over 32 000 years ago when Paleolithic peoples ground wild oats into a porridge for food in southern Italy. It reached the Western Bank's of the Joran Valley ca 11 000 years ago. Ancient Romans brought oats to Britain. It is now a stable in Scotland. The first commercial brand appeared in the United States in 1877.

~pan cakes~
1 cup (130 g) organic (gluten-free) oatmeal
2 organic apples, grated
2 organic eggs
2/3 cups (150 g) (dairy-free) yogurt or orange juice
1 tsp. (5 g) baking powder
1/2 tsp. (2.5 g) cinnamon
1 Tbs (10o g) chia and flax seeds

~waffles~
1 cup (130 g) organic (GF) oatmeal
2 organic apples, grated
1 organic egg
2 cups (260 g) organic orange juice
2 Tbs. olive oil
1 Tbs. (10 g) each: chia and flax seeds

ūnus I. Mix all ingredients.
duo II. Makes pan cakes or 2 waffles
trēs III. Serve with favorite toppings.





Ragu is an Italian meat (beef, pork, game, or even horse) base sauce, usually served over pasta. We are using shrimp instead in our ragu dish.

Ragù di gamberi con pesto e pomodorini
(Italian)
serves 4

4 Tbs. olive oil
4 chopped organic garlic cloves
organic grape tomatoes
wild shrimp, peeled with tails on
juice of 1 organic lemon
basil pesto
cooked (gluten-free) pasta
gluten-free) bread

uno 1. Sauté in a saucepan over medium-high heat, add the oil, then the garlic, about 30 seconds.


due 2. Add the tomatoes for 8 minutes.


tre 3. Reduce to simmer add the shrimp over the tomatoes, cook for 7 minutes, until the shrimp turn pink (135-146F/57-60C).


quattro 4. Turn off the heat, add the lemon juice, fold in the pesto.


cinque 5. Serve over the cooked pasta with bread and salad. (White wine is nice also.)

 Bruschetta is an Italian antipasto. 
Bruschetta al formaggio di mele (Italian)

Makes 8 servings
Preheat the oven 375F (190C)

(diary-free) organic butter
sliced organic onion
slice organic avocado
8 slices of (gluten-free) baguette or pumpernickel bread
(dairy-free) soft cheese
sliced organic apples
organic honey for garnish

optional leaves:
  • thyme 
  • basil 
  • parsley 

uno 1. Melt the butter.

due 2. Add the onions and thyme and cook until the onions caramelized, about 20 minutes.

tre 3.
Baguette:
 (a) Place the baguette in the oven and lightly toast for 10 minutes.
 (b) Remove and turn over. 
 (c) Turn the oven to boil.
 (d) Spread cheese on each slice of bread.
 (e) Boil until the cheese melts.

Pumpernickel
 (a) Spread cheese on each pumpernickel.

quattro 4. Top with the onions, sliced avocado and apple.

cinque 5. Drizzle with honey and garnish with optional leaves of your choice.

It just might be the ultimate Indian comfort food. It is rich and creamy but not spicy like curry.

कोरमा (Hind)
/korma/
Serves 4



1/4 cup (60 ml) olive oil, water, and heavy cream or (dairy-free) yogurt or coconut milk
1 slice organic onion
1/2 tsp. (2,5 g) cardamom, ground coriander, turmeric
2 tsp. (10 g) each: cloves and black pepper
1-inch (2,5 cm) cinnamon stick
1 tsp. (5 g) each: garlic, ginger, cumin, and garam masala
1 bay leaf
1 pound (130 g) organic chicken thighs, cut into bite-size pieces
1 sliced organic tomato
organic cashews and almonds
1 Tbs. (15 g) organic (gluten-free) flour
cooked organic rice

optional: 
  • chopped cilantro/parsley
  • 1 tsp. (5 g) red chili powder

~Hindi~

एक /ek/ 1. Fry the onion, cardamom, and cloves for 3-4 minutes.


दो /do/ 2. Add the chicken, garlic and ginger. Cook 2-3 minutes.


तीन /teen/ 3. Add the rest of the spies (except garam masala) and cook another 2-3 minutes.


चार /char/ 4. Add the tomato and cook 2-3 minutes more.


पांच /panch/ 5. Add the cream, yogurt or milk, plus the nuts.


: /chay/ 6. Cover, reduce the heat, and cook about 10 minutes.

 (a) If it is too thick, pour some hot water.


सात /sāth/ 7. Add the garam masala and garnish optional cilantro/parsley.


आठ /āt/ 8. Serve with the rice.
