 Turn a fish dinner into a Mexican dish. Make it easier, by placing the meal in a bowl.

Cuencos de pescado mexicano  (Spanish)
Serves 4
Preheat the oven to 475ºF/185ºC

a pound (455 g) wild Pacific cod, sliced into small pieces. 
1/2 cup (65 g) (GF) Greek yogurt
3/4 cup (95 g) (GF) bread crumbs
1-2 Tbs. (15-30 ml) hot sauce, eg. tabasco, adobo, ranchero, sriracha, or make your own (see below*)
2 Tbs. (30 ml) organic lime juice
1/4 tsp. black pepper
2 cups (260 g) each organic : shredded cabbage and cooked brown rice
1 cup (130 g) sliced organic radishes
sliced organic green onions 
garnish: cilantro or parsley and lime wedges
organic (GF) small, warm taco shells

optional: sliced jalapeños 


*homemade 
mild hot sauce:
1 Tbs. each: Himalayan salt, garlic powder onion powder, and black pepper
1/2 tsp. each: oregano and cumin

hotter sauce: 
1 tsp. chipotle or ancho chili powder
1 Tbs. each: apple cider vinegar and tomato paste
1/2 tsp. cumin
pinch of garlic powder

uno 1.  Spray olive oil on a baking sheet.


dos 2. Coat the fish with 1/4 cup (60 ml) yogurt.


tres 3. Roll the fish in the bread crumbs.


cuatro 4. Bake until crispy about 8-10 minutes. Inside temperature reaches 145ºF/63ºC.


cinco 5. Use the rest of the yogurt and mix with salt and pepper and lime juice.


seis 6. In each bowl, put the rice, cabbage, radishes, fish, sliced green onions, lime wedges.


siete 7.  Serve the sauce, cilantro/parsley, jalapeños, and taco shells on the side.

Avocado (aka alligator pear or avocado pear) is a native fruit grown by indigenous people from Mexico to Peru for thousands of years.

Aguacate relleno de ensalada de garbanzos y atún (Spanish)
Severs 2-4 

1/4- 1/2 cup (30-60 g) Greek yogurt, sour cream, dairy-free yogurt or sour cream; vegan original mayo
1 Tbs. (15 ml) each: sweet pickle relish, organic lemon juice, and Dijon mustard
1 can wild tuna, drained 
1 can organic garbanzo beans, drained
2 organic green onions, sliced
1/2 tsp celery seed
2 large avocados, sliced in half, pitted
chopped parsley

uno 1.  Combine tuna and beans. Use a folk to break up the tuna.

dos 2. In another blow, mix the mayonnaise, mustard, and lemon juice.


tres 3. Mix the sauce with the tuna/beans and the rest of the ingredients except the avocados and parsley.


cuatro 4.  Sp0on the tuna mixture into the avocados and garnish with parsley.

Soba (そば or 蕎麦 "buckwheat") are thin Japanese noodles made from buckwheat flour, usually gluten-free, but look for "100% buckwheat noodles" (十割そば /jūwari soba) [brands like: Eden Foods, King Soba, or Lotus Foods]

The noodles are eaten in cold salads (ざるサラダ zaru soba) or hot soups with mushrooms (きのこそば kinoko soba), meat (肉そば niku soba), or vegetables...

Severs 2

1 Tbs. (15 ml) soy sauce, gluten-free liquid aminos or tamari 
1 Tbs. (15 ml) sesame oil
3 Tbs. (18 g) chopped organic garlic
2 Tbs. (12 g) organic chopped ginger 
1/2 tsp. (1 g) dried red pepper flakes
4 sliced organic shiitake mushrooms
organic bok choy with leaves, chopped
4 cups (960 ml) organic vegetable stock
7 ounces (175 g) soba noodles, cooked and rinsed
1 organic baby bok choy, cut lengthwise into 6 pieces
diced organic onion
1/2 cup (65 g) organic green onions
3/4 cup (95 g) sliced diagonally organic carrots 
1/2 organic lime
1 tsp. (5 ml) rice vinegar or mirin
toasted sesame seeds
1 piece kelp (昆布 kombu) 10 g, 4x4 inches/10x10 cm soak in 3 cups (720 ml) of water for at least 30 minutes

i /long e/

/ichi/ 1. Place the sheet kelp and water into a saucepan. Bring to boil, remove the kelp.


/ni/ 2. In a soup pot on low heat, add the sesame oil and sauté the garlic, onions, and ginger about 2 minutes.


/san/ 3. Add the red pepper flakes and sauté for at least 3 minutes.


/shi/ 4. Stir in the mushrooms and cook for 2 minutes.


/go/ 5. Stir in 1/4 cup (60 ml) vegetable stock.


/roku/ 6. Add the tamari/soy sauce/liquid amino and simmer for a few minutes.


  /shichi/ 7. Add rest of the stock and the vegetables. Bring to a boil, cover, and simmer about 8 minutes.


  /hachi/ 8. In two bowls, add the noodles, vegetables, and kelp. 


  /kyuu/ 9. When the soup is warmed, pour into the bowls and sprinkle with sesame seeds.

Though tofu originated in China nearly 2 000 years, it has found its way into many East Asian and Southeast Asian cuisines. Benjamin Franklin was the first American to mention "Towfu" in a letter in 1770 while visiting London. The first tofu company in the U.S. was in 1878. But, it was not well known until middle of the 20th century. 

Korean tofu is marinated in various spices and varies from family to family.

두부 (Korean)
/dubu/

1 package of organic, firm tofu
3 Tbs. (45 ml) soy sauce or gluten-free liquid aminos
4 Tbs. (60 ml) water
garlic minced (to taste)
1 Tbs. (6 g) paprika and for more heat, cayenne pepper 
1 Tbs. (15 g) organic honey
1 Tbs. (15 ml) sesame oil
organic green onions, chopped
sesame seeds

/il/ 1. Press the tofu with heavy object for 15 minutes to release the water or heat in the microwave for 4 minutes.


/ee/ 2. Cut into small squares.


/sam/ 3. Fry in the oil until it turns brown.


/sa/ 4. Whisk: soy sauce/liquid aminos, water, garlic, spices,and honey.


/oh/ 5. Pour the sauce over the tofu.


/yook/ 6. Garnish with green onions and sesame seeds.


/chil/ 7. Serve as a side dish.

ยำแตงโมไก่ฉีก (Thai)
/yum tangmo sen mee kai cheek/
"Spicy Watermelon Salad 
with Shredded Chicken"
Serves 4

1 pound (455 g) organic, packaged in air not water, boneless chicken thighs 
6 cups (780 g) organic watermelon
2 Tbs. organi shallots, chopped
1 Tbs. (15 ml) each: fish and chili sauces
2 Tbs. (30 ml) each: organic lime juice and soy sauce or gluten-free liquid aminos
1 Tbs. (6 g) chopped ginger
1 tsp. (5 ml) sesame oil
Thai rice noodles (not gluten-free), substitute GF rice sticks, brown rice noodles, rice vermicelli, glass noodles, sweet potato or shirataki noodles
1 1/2 cups (195 g) organic carrots, julienned cut
1 cup (130 g) organic radish, sliced
chopped cilantro or parsley
sliced mint and organic green onions
organic peanuts, cut in half
organic lime wedges for garnish

หนึ่ง /nùeng/ 1. Grill the chicken for about 7 minutes on each side, inside temperature 165ºF/75ºC.


สอง /song/ 2. Let it rest for 10 minutes before slicing them into 1 inch/6 mm pieces.


สาม /sam/ 3. Place half of the cut watermelon in a blender, blend.


สี่ /see/ 4. Pour 1 1/2 cups (360 ml) of the juice into a saucepan.


ห้า /hah/ 5. Add shallots, chili, fish and soy/liquid amino sauces, lime juice, and ginger.


หก /hòke/ 6. Bring to a boil, reduce to medium and cook, uncovered for 25 minutes.

   Note: If using GF noodles, add little olive oil immediately after rinsing so they will not stick.


เจ็ด /jèd/ 7. Stir in the sesame oil, remove from heat, and let it cool.


แปด /ppaed/ 8. Cook the noodle as directed on the package. Rinse in cold water and drain.


เก้า /gaao/ 9. Place the noodles in a large bowl, add cooke chicken, carrots, radishes, cilantro/parsley, mint, and rest of the watermelon juice.


สิบ /sip/ ๑๐ 10. Toss in the  green onions, peanuts, rest of the watermelon sauce. Serve with lime wedges.

Serves 4

Meatballs:
1 pound (455 g) of organic ground lamb or chicken
2/3 cup (85 g) (gluten-free) bread crumbs 
1 organic egg
2 Tbs. (30 ml) soy sauce or (GF) liquid aminos
2 tsp. (4 g) each: grated garlic and ginger 
olive oil
1/2 cup (120 ml) organic orange juice
optional: Sriracha sauce for "heat"

Sauce:
2 Tbs. (30 g) each organic: honey and chopped green onions
2 Tbs. (15 ml) rice winer vinegar
1 Tbs. (15 g) organic cornstarch + 2 Tbs. (30 ml) water
organic orange zest
1 tsp. (5 g) sesame seeds
1/4 cup (30 g) organic brown sugar

Serve:
organic: cooked rice, streamed broccoli, and sautéed snow peas

~Pan fried or baked in over 425ºF/220ºC (inside temperature chicken 375ºF/191ºC, lamb 145ºF/63ºC)~

1. Mix the chicken/lamb, breadcrumbs, egg, soy sauce/liquid aminos, green onions, garlic, ginger, brown sugar, and optional Sriracha.
2. Form into 12 meatballs.

3. Pan fry: Sear on both sides for 80-10 minutes.
3. Bake in the oven for 15 minutes.

4. Simmer the orange juice, honey, and vinegar.
5. Whisk in the cornstarch and water to thicken
6. Cook about 5-8 minutes.
7. Return the meatballs in the sauce for another 2 minutes.
8. Serve over rice with broccoli and snow peas.
9. Garnish with green onions and sesame seeds.








 

 
The dish is from Mexico or Peru, with a touch of cocoa and a hint of chipotle, top off with dish of fresh tomatoes and you have one great dinner.
Kabocha Rellena (Spanish)
Serves 6
preheat the oven to 400F (200C)

Kabocha:
1 organic kabocha squash, about 4 pounds (1.820 g)
2 Tbs. (30 ml) organic coconut oil, melted
14 ounce (400 g) organic black beans, inside and drained
1 organic ripe avocado, diced
3 organi green onions, thinly sliced
1/4 cup (60 ml) (dairy-free) yogurt
chopped cilantro or parsley
optional crushed chilies

uno 1. Cut the squash in half, lengthwise, and scrap out the seeds.


dos 2. Cut each half into 3 wedges.


tres 3. Place on parchment-lined baking sheet and brush inside with melted coconut oil.


cuatro 4. Bake for 30-45 minutes, or until it is tender when pierced with a fork.



Salsa de tomate:

1 Tbs. (15 ml) organic coconut oil

1/2 diced organic sweet onion

2 large organic garlic cloves, smashed and minced

14 ounce (400 g) (fire-roasted) dice tomatoes, save the juice

2 dried pitted organic dates

1 Tbs. (15 g) each: tahini or cashew butter and chipotle pepper

2 tsp. (10 g) cocoa powder

1 tsp. (5 g) each: cinnamon and dried thyme

little Himalayan salt

juice of 1 organic lime


cinco 5. Sauté onions in oil.


seis 6. Add garlic for a minute.


siete 7. Stir in the tomatoes with the juice.


ocho 8. Simmer for 5-10 minutes.


nueve 9. Purée until smooth but a little chunky.


diez 10. Sit aside and cover to keep warm.



Ahora (now):

once 11. When squash is baked, remove, place wedges on serving plates.


doce 12. Drizzle with the tomato sauce.


trece 13. Scatter with black beans, dice avocado, and green onions.


catorce 14. Dollop of yogurt, some cilantro/parsley, little lime juice, and pinch of chilies.
