We had very few tomatoes from our five plants this year. There are still some on the vine, but they are green...so let's make a salsa!
Makes about 3 cups (720 ml)1 cup (240 ml) each chopped ripe organic: red tomatoes and green tomatoes
3/4 cup (180 ml) diced organic apples
1/4 cup (60 ml) diced red onion
1 Tb. (15 ml) fresh organic lime juice
1 tsp (2,5 ml) minced fresh garlic (just planted fall garlic to harvest in the spring)
1 tsp (2,5 ml) minced fresh ginger (It keeps longer and fresher when kept in the refrigerator.)
1/4 (60 ml) chopped fresh sage, rosemary, thyme and/or mint* (all can be grown indoors during the winter)
1. Combine all ingredients in a bowl.
2. Top with herb sprigs of sage, rosemary, thyme and mint.
3. Can be refrigerated up to 5 days.
4. Serve on scrambled eggs, black beans, fish, or as dip.
*The 3-year old neighbor boy loves to eat these herbs from our garden. What a way to start his taste buds for life! (P.S. Dill is his favorite.)
