Makes 8 patties
Preheat oven 400℉ (205℃)
A. Steam or boil until tender:
1. 2 lbs. (900 g) Jerusalem artichokes, evenly cut
2. Mash and let cool.
B. Combine in a bowl:
2/3 cup (150 ml) (gluten free) flour
4 Tbs. (60 ml) olive oil
1 Tbs. (15 ml) fresh or 1 tsp. (5 ml) of dry mint
1 tsp. coriander
other herbs to taste (optional)
C. Mix A and B and form 8 size patties:
1. Place on a baking sheet
2. Cook 30-40 minutes.
D. Optional toppings:
-salsa
-slices of cheese
-lettuce and tomatoes
-soy sauce (amino liquid-gluten free)
-mint, basil, cilantro, or parsley leaves
