What makes this "Greek" are the spices. 

λεμόνι κοτόπουλο (Greek)
/lemóni kotópoulo/
Serves 4

2 Tbs. (30 ml) organic lemon juice
2 tsp. (10 ml) olive oil
1 tsp. (5 ml) each: dried oregano, grated organic lemon peel, and minced garlic clove,
pinch of sea salt and black pepper
4 boneless organic skinless chicken breasts
1 organic lemon, cut into wedges for garnish

1. Whisk the lemon juice, oil, lemon peel, oregano, garlic, salt and pepper in a bowl.
2. Marinate the chicken for 15 minutes.
3.  Coat a nonstick skillet with olive oil cooking spray. Heat over medium-heat.
4. Remove the chicken, discard the marinade. Add chicken to the skillet and cook about 3 minutes.
5. Turn the pieces over, reduce to medium-low heat, and cook about 10 minutes or until the the center of the chicken is not pink in color.
6. Serve with lemon wedges. Do not forget the salad and vegetables.
