Serves 4
A. Serve with rice or organic potatoes, prepare ahead of time.
B. Wild salmon: cooking time about 11 minutes
1 tsp. (5 ml) each: basil leaves and garlic powder1/2 tsp (2,5 ml) oregano
4 wild salmon fillets with skin, about 4 ounces (115 g) each
1 Tbs. + 2 tsp. (25 ml) olive oil
1 Tbs. (15 ml) sugar
1 cup (240 g) organic cherry tomatoes
organic lemon wedges
1. Mix: basil, garlic powder, and oregano.
2. Put 2 tsp. (10 ml) of the mixture over each salmon fillet.
3. Heat 1 Tbs. (15 ml) oil in a iron skillet.
3. Cook the salmon, skin down about 5 minutes.
4. Add to the skillet: 2 tsp. (10 ml) oil, sugar, and tomatoes.
5. Turn the salmon over and cook another 6 minutes.
6. Salmon should flack with a fork.

Wild has: fewer calories, half the fat, more calcium, iron, potassium, zinc, with less sodium, 20.5% less saturated fat, as well as no antibiotics and unnatural foods to raise them.
