We have too many avocados, so I made some pesto to serve as a base on homemade pizza tonight.-Mike
1 avocado, peeled and seed removed*
handful of basil leaves
some black pepper and oregano
2 Tbs. (30 ml) organic lemon juice
2-3 cloves of garlic
Parmesan cheese (or dairy free mozzarella cheese)
olive oil
1. Process all ingredients in a blender.
2. Store in a jar in the refrigerate.
* Save the seed, put three tooth-picks along the side, place in a jar of water until leaves form, then plant in a pot. It will not produce an avocado but makes a great, free houseplant.
Avocados provide healthful monounsaturated fat, fiber and vitamin E.
With all the toppings, it is hard to see the pesto!
