Most Sundays, we have a nice breakfast all together, good food, nice background music, café au lait or cappuccino, organic fruit juice, and this morning...

1 ¼ cup (300 g) gluten-free all-purpose flour
¼ cup (60 g) ground flax 
1 tsp. (5 ml) aluminum-free baking powder
2 tsp. (30 ml) ground cinnamon
¼ tsp. (1,2 ml) each: sea salt and baking soda
2 Tbs. (30 ml) brown sugar
½ tsp. (2,5 ml) vanilla
½ cup (120 ml) each organic apple sauce and almond milk

1. Preheat and grease a waffle maker.
2. In a large bowl, combine the flour, flax, cinnamon, baking powder, baking soda, salt, and brown sugar.
3. Mix in the apple sauce and vanilla.
4. Slowly pour the almond milk into the bowl and mix to form a batter.
5. If the batter is too thick, add 1 Tbs. (15 ml) almond milk at a time.
6. Spoon some of the batter into the center of the hot waffle maker.
7. Close the lid, cook until golden brown.
8. Serve with all or as many as you like:

  • organic maple syrup
  • sliced organic bananas
  • chopped organic walnuts
  • organic berries
  • Greek, plain or daily free almond yogurt
  • favorit jams
  • etc.
