This salsa is not hot or spicy but has lots of colors and flavors.
Salsa Cubana
Makes 2 cups (480 ml)

4 Tbs. (60 ml) organic butter 
½ tsp. (2,5 ml) paprika
1 organic chopped onion
1 organic chopped bell pepper (green, yellow, or red-or mix them altogether)
1-2 minced cloves of garlic
1 ½ cups (360 ml) organic chopped tomatoes

1. Melt butter on low heat.
2. Add paprika, onion, pepper, and garlic.
3. Stir while adding the tomatoes on medium-high heat for about 5-7 minutes.
4. Cool to room temperature.
5. Purée in a food processor. 
6. Store covered in the refrigerator.
7. Serve over foods
  • add some Parmesan cheese and serve over pasta.
  • fish, chicken, meat, or vegetables
  • with chips as appetizer dip
