For the diary-free guests, almond feta cheese hits the spot!
4 cups (910 g) organic raw almonds
1 1/2 cups (360 ml) water
1 cup (240 ml) organic lemon juice
1/2 cup + 2 Tbs. (150 ml) olive oil
4 garlic cloves
1. Rinse almonds in cold water.
2. Place in a large bowl and add water to cover. Cover a let stand overnight.
3. Drain and rinse almonds.
4. Put the almonds in a food processor or blender.
5. Add water, lemon juice, olive oil, and garlic.
6. Cover and process 4 or 5 minutes until pureed.
7. Cover and chill.
