Great on top of Latin dishes, filler for tacos, or chips and dip.
Makes about 2 cups (500 ml)
Mix together:
1 large onion, peeled and sliced
1 cup (250 ml) of organic corn
1 sliced organic tomato
1/4 cup (50 ml) chopped basil leaves
2 Tbs. (25 ml) each: olive oil and organic lemon juice
1 Tbs. (15 ml) of organic lime juice
cilantro* or basil

*Cilantro plant needs full sun or light shade, best grown in well-drained, moist soil, spaced about 6-8 inches (15-20 cm) apart, harvest in 3-4 weeks in late spring.
